Peanut Chicken Salsa Salad


  1. Dressing:

    2 T rice vinegar

    4 T peanut butter

    2 t honey

    2 t soy sauce

    1 t chili sauce or ½ t red pepper flakes

    2 cloves crushed garlic

    2” chunk of grated fresh ginger

    Combine sauce ingredients in a large bowl. Microwave for 1 – 2 minutes and stir until smooth.


    Cook 12 oz angel hair pasta according to package directions, drain, and run under cold water to stop the cooking.

    Add to pasta:

    1 c shredded carrots

    ½ c chopped green onions

    ¼ c chopped cilantro

    ½ c chopped peanuts

    Chopped chicken breast (optional)

    Stir in the dressing, mix to coat, and refrigerate.
